Sweet Potato Pumpkin Chili

Description

This one wins cook-offs against chilis with meat in it.

Ingredients

  • 1 Onion, Diced
  • 1 Yellow Pepper, Diced
  • 1 Carrot, Peeled, Thin Rounds
  • 1 Med. Sweet Potato, Peeled & Diced
  • ½ Baking Pumpkin, Peeled & Diced
  • 1 Serrano Pepper, Minced
  • 6 Cloves Garlic, Smashed
  • 15 oz (1 can) Fire Roasted Diced Tomatoes
  • 15 oz (1 can) Mexicorn
  • 15 oz (1 can each) Black, Kidney, & Pinto Beans (3 cans, 1 can each)
  • 6oz (1 can) Tomato Paste
  • 2-3c Water
  • ?? Cinnamon, Salt, and Pepper to Taste

Method

  1. Sauté onion, pepper, carrot, Sweet potato, and pumpkin.
  2. Add serrano and garlic after Peppers and carrots start to get color.
  3. Don’t scrape the bottom, but mix often.
  4. Cook for about 5 more min.
  5. Add roasted tomatoes to loosen up flavor stuck on the bottom. Don’t scrape just cook for 5 more min.
  6. Transfer to crockpot.
  7. Add all canned ingredients / water & cook on high.
  8. Mix often and season as you like!
